 Today I share with you my April contribution to the Secret Recipe Club! We enjoyed these Chocolate Cherry Brownies for dessert last week, with a dollop of whipped cream and cherry sauce.

This month I was assigned the blog  Why I’m Not Skinny.  I spent a lot of time looking through Maxcie’s blog, she describes herself as a 30- Something from South Africa, living abroad in Brussels.  Her blog is full of restaurant reviews and recipes.  I actually made two, this one and her Cheese Swirls.  Had the season been different you would be reading a recipe for Tomato Salad!

The recipe I followed was for Berry Chocolate Brownies, but we had a slight glitch in the kitchen; His name is Hayden and he is my youngest son.  I purchased all of the ingredients, and was slowly putting groceries away in between a half dozen other things when he came to me and said, “those raspberries weren’t for anything special were they?”  “Why?” was my reply.  “Well, I was standing at the counter talking to Josie (his twin) and I had one, and then I looked down and they were GONE! I don’t know how it happened, but I ate them ALL!”

I always have frozen cherries in the freezer  for smoothies … and so the Chocolate Cherry Brownies were born.   I had planned to serve them warm with cherry sauce and whipped cream.  I will tell you that if you want a gooey brownie, do it that way.  If you want a more stabilized brownie, let them completely cool, and they will cut like a brownie most of us are used to.  They were good both ways!

Chocolate Cherry Brownies

Gooey fudgy brownies with cherries, served as a dessert with cherry sauce or cooled and cut as bars.

Ingredients

  • 1 cup Semi-Sweet Chocolate Chips
  • 1/2 cup Milk Chocolate Chips
  • 2 sticks butter
  • 2 cups sugar
  • 4 large eggs
  • 1 cup flour
  • 1/2 cup cocoa powder
  • 2 cups fresh or frozen cherries dusted with 1/4 cup flour
  • For the syrup:
  • 2 cups cherries
  • 1/4 cup sugar
  • 1 Tablespoon lemon juice

Instructions

  • Preheat oven to 350 degrees. Spray a 9x13 baking dish with non-stick cooking spray.
  • In a saucepan over low heat melt butter and chocolate chips. Stirring until melted and smooth. Remove from heat.
  • Whisk in eggs, one at a time. Add sugar. Stir.
  • Sift in flour and cocoa powder.
  • Coat cherries with flour, then gently fold into batter.
  • Spread into pan and bake for 40-45 minutes.
  • Serve warm with whipped cream or ice cream and cherry sauce, or cool completely and cut into bars.
  • Cherry Sauce: Combine cherries, lemon juice and sugar in a saucepan, over medium heat, stirring occasionally until the cherries break down and sauce thickens. About 10-15 minutes. Wonderful over desserts, ice cream, pancakes etc.
