This recipe for Beef & Noodles is one of those recipes that I hold close to my heart.  It was one of my MOST favorite meals as a child growing up.  

To me, this meal just screams COMFORT!  Thick egg noodles, engulfed in a flavorful gravy made from simmering the beef, onions, celery, in the beef stock.

I loved when I asked my mom, “What’s for dinner?” and she answered “Beef & Noodles!”  It was always one of my most favorite meals.  

After she answered, the worst part was waiting for it to be time to eat!

 

I first posted this recipe in May of 2014, and once I decided to add the recipe video,  I decided it needed a little “facelift” and to be re-shared.

Even more so now that I am completely OBSESSED with making my own egg noodles. Another thing I loved to do when I was growing up.  

So, when I re-made this recipe recently I used them, and it was a total game-changer.

I mean … just LOOK!! 

Now don’t let the whole homemade noodle thing intimidate you.  This meal is perfectly fine with the frozen egg noodles or the dry ones, too.  

 

Beef & Noodles Crock Pot - An Affair from the Heart

Ingredients in Beef & Noodles:

  • Egg Noodles
  • Beef Stew Meat
  • celery
  • onion
  • beef stock
  • cornstarch
  • salt & pepper

Add the chunks of beef, onions, and celery into a large pot on the stove.

Add the stock, salt and pepper it, and cover it and let it simmer until the vegetables and meat are tender.

I add a little cornstarch/water mixture to thicken up the gravy.  And then toss in the noodles. 

Alternatively, you could dredge the beef tips in flour, salt, and pepper, and brown it in a bit of oil. 

I just always omit that part – it goes faster this way, and I get to eat it sooner!

Although I typically make this on the stove, you can do all of the prep with your crockpot if you desire.  I have done it both ways.

For the crockpot, you just put the meat, onions and celery and stock in the slow cooker and let it go on low all day. Thicken the gravy when you get home and add in the noodles.

Either way — you have to try it!

Beef & Noodles

Comfort food at it's best. Tender chunks of beef, celery and egg noodles.

Ingredients

  • 3 pounds beef stew meat
  • 2 - 14 ounce cans beef stock
  • 2 1/2 cups celery diced
  • 1 medium onion chopped
  • salt and pepper to taste
  • 1/4 cup corn starch dissolved in 1/4 water
  • 2 - 12 ounce packages of Reames Frozen Home style Egg Noodles

Instructions

  • To a pan over medium heat add beef, beef stock, celery, and onion. Generously salt and pepper.
  • Cover and simmer for about an hour, until meat and veggies are tender. Stirring occasionally.
  • While meat cooks, prepare your egg noodles per the package instructions. Or make your own homemade egg noodles.
  • When the meat is tender, add corn starch/water mixture and stir, the sauce will thicken in just a few minutes.
  • Drain and add the noodles, combine with meat mixture.
  • I love mine just like it is, but my hubby tops it with sour cream!

Notes

**Note If you are wanting to make this in your crock pot, simply cook the meat, broth, onions celery on low all day. Finish it up with your noodles when you're ready to eat. Thicken as necessary.

  1. What sides do you have with this (of course IF you decide to have sides!)? DD is making as we speak. It’s the closest I’ve found to a German recipie I used to have (lost) & make for her so, so many years ago! I’ve been under the weather lately & she thought this would be just the thing to comfort some!! ?

    1. Hi, Janet! I don’t ever serve sides with it, as it’s a meal in itself! I always add plenty of celery and count that as my vegetable! 😉 I am sure you could do a salad or some other green veggie with it if you desired, but we just eat it as is! 🙂 I would love to know what you think?

  2. I made this for my dinner. While it was cooking the house smelled insanely good and all of us struggled with our mouths watering! When we ate it, it did not disappoint! This was so easy and flavorful and delicious! I added a bit of garlic, cause we are huge garlic fans in our house! Kids LOVED this and asked if I could make it again next week! Leftovers were even tastier! This well go into our rotation! Thanks for sharing!

  3. I made this for my family last week! The aroma coming from the kitchen brought one kid from their video games stupor back to consciousness and the other out of the toy room, both asking “what is that smell?” They were absolutely pained when I told them that it would take about another 45 minutes until we could eat. My house smelled amazing! I had no trouble getting help to set the table for dinner and didn’t have to call the kids multiple times before they came to sit down. They were sitting before it was even brought to the table! WE LOVED this dinner and the kids have made me promise to make it again this week! I added some garlic to this too, as we are huge garlic fans in our house! This was easy and delicious and the leftovers are even better! Thank you so much for sharing!

    1. Are you talking about the “ribbon” egg noodles in the pasta section? You are welcome to use whatever noodles you like. I find that the thicker ones just make a more comforting meal, but that is just my opinion. 🙂

    1. I just use it “to taste.” I feel like everyone’s opinion on how much salt & pepper is “too much” varies so much. It’s easy to add more when you eat it, not take it away! 🙂

  5. I can’t wait to try this tonight! This was my favorite dish growing up! Can you cook the noodles right in the beefy mixture or do you need to cook them separately?

    1. I have never made it in the IP – I totally should do that! I would say you would still want to cook your noodles separately, and stir them in when the meat is done.

  6. I am a Grandmother of 2 and 1 on the way, mother of two. I grew up watching my Great Grandma Kathleen Lear Bostic cooking this and the homemade noodles and do it now for my family. It’s fun to remember eating them raw when they were drying -(I turned out just fine!!) all while Grandma wasn’t looking and turning my back to allow my family to do the same.
